Fancy shrimp on the barbie? This July, try tucking into succulent seafood that is sizzled to perfection over hot coals, in a traditional Hawaiian underground oven (known as an “imu”), on Sentosa!
As part of Singapore Food Festival 2012, Sentosa’s barbeque extravaganza will feature an oven in a pit on Siloso Beach, and offer guests a chance to experience this traditional method of barbeque that is usually only found in Polynesia!
Whilst dining on the beach and the pier, guests savour a scrumptious array of seafood, including clams, mussels, prawns, squid, fish and crab that are grilled to luscious perfection and accompanied by eight unique homemade barbeque sauces.
Before entering the hot underground oven, the shellfish and prawns are carefully wrapped two ways:
- ‘En Papillote’: wrapped the French way in Fata paper and flavoured with beer, which will infuse the dish with a delightful fragrance
- Traditional Indonesian ‘Pepes’: covered in banana leaves for that distinct aroma and seasoned with a rich and spicy Javanese sambal chilli paste.
